This quesadilla recipe is easy, quick, and cheap. Best part? It does not sacrifice taste.

- 1–12.5 oz canned Chicken (or 10-12oz tuna, or 2-6.4 oz tuna pouches.)
- 1–2 tablespoons homemade taco seasoning (or 1 package of taco seasoning)
- 1–2 Flour Tortillas (One tortilla makes a great Travel size and a two tortilla is perfect for dinner, especially with rice)
- 4 oz shredded cheese (You can buy it pre-shredded, but a block of cheese and shredding it yourself is cheaper.)
Optional Additions
- Pico de Gallo/Salsa
- black beans
- rice
- fresh cilantro
Instructions
For a 2-tortilla quesadilla
- Mix the Chicken/Tuna with your taco seasoning (Add a little at first and continue to taste). Set aside and begin to assemble
- Take one tortilla and place it on a microwave-safe plate.
- Sprinkle some cheese (lightly covering the tortilla)
- Next, add your Chicken/tuna mixture
- now add any optional additions
- Top with a little more cheese and the other tortilla
- Microwave for 30 seconds to 1 minute 30 sec in your microwave (This varies greatly on your microwave).
- Cut (optional) and enjoy!
For a 1-tortilla quesadilla
- Mix the Chicken/Tuna with your taco seasoning (Add a little at first and continue to taste). Set aside and begin to assemble
- Take the tortilla and place it on a microwave-safe plate.
- Sprinkle some cheese, lightly covering half of the tortilla.
- Next, add your Chicken/tuna mixture onto the cheese side.
- now add any optional additions
- Top with a little more cheese and fold. You might need to press lightly to make sure it stays closed.
- Microwave for 30 seconds to 1 minute 30 sec in your microwave (This varies greatly on your microwave).
- Cut (optional) and enjoy!
Notes
- The meat mixture and 4 oz of cheese should make about 3 2-tortilla quesadillas and 6 1-tortilla quesadillas (depending on how much of both you put in).
- The filling is freezer friendly and will last about 2-4 months in the freezer in a freezer-safe container.
