With the Super Bowl, it’s a time for everyone, to get together enjoy food and watch whatever it is you’re there for. The music (me), the football (sometimes me), the commercials (my kids). Although, really, I’m pretty sure it’s mostly for the food.

Making the Soup
The soup itself is pretty easy to make as well as the tortilla strip toppings. The soup starts with a few basic veg and aromatics. Cooking them to a soft and fragrant consistency. Then you slowly start to build the soup. Adding in and layer each ingredient to create a delicious and complex soup that wasn’t hard to make. to get the full instructions to jump down to the recipe.

Homemade Sloppy Joe
I am convinced, that this is the BEST homemade sloppy joe recipe, and no one will convince me otherwise. It’s messy, saucy, a little sweet, and has a little kick to it.
For my Sloppy Joe recipe, I use my Everything BBQ Rub for the seasonings in my sauce. It adds sweetness and spice. The soy and Worcestershire sauces add amazing umami flavor and the pineapple is what gives it sweetness.
This recipe does use a lot of meat. Don’t worry, it’s a freezer-friendly meal! You can split this in half, eat one half and take the other half, let it get to room temp, and freeze it in a freezer-safe bag. -It will last 4 months in the freezer.

Beer Battered Fried Fish
For anyone that’s not from Wisconsin, Friday Night Fish Fry is a huge tradition for the entire state. Wisconsin is known for its fish fry (especially beer batter fish) with an ice-cold beer. In case you were wondering… yes, we LOVE our beer too.
Fun Facts… Fish Fry grew huge in Wisconsin due to the large Catholic communities not eating meat on Fridays (to this day, many churches hold Fish Fries on Fridays to offer a non-meat option to the community). Prohibition also created a need for bars to find creative ways to bring in customers. So… they offered cheap fish dinners with alcohol under the table (shhh).

Easy Dill Dip
Dill dip starts with a simple and fairly classic combination of sour cream and mayonnaise. I find most people tend to do a 1:1 ratio of sour cream and mayonnaise, but I actually prefer a higher amount of sour cream to mayonnaise ratio. I find it to be less oily and I love the coolness that sour cream brings.
Homemade Taco Dip
This Easy Taco Dip is a super simple dip that’s loaded with flavor and is guaranteed to be hit at any cookout this summer. Made with a cream cheese and Greek yogurt base to give you a healthy-ish dip (which you know is my fav type). To make the dip, I use my homemade taco seasoning, and top with all yummy taco goodness you expect from a taco truck (and a few extra items, because they’re just good)!

Mexican Street Corn Pasta Salad
Summer is a great time for pasta salads and one thing I’ve been really enjoying is revamping some favorite Tex-Mex recipes from my childhood. Many of you know that my dad is Chinese, but what many of you may not know is my mom is a Texan, and my dad, although Chinese, is associated greatly as a Texan himself (growing up there much of his life). So even though I was born and bred in Wisconsin, I grew up eating a lot, and I mean a lot of Tex-Mex food.
