SO WHAT IS PANDAN?

Pandan is a tropical plant that grows abundantly in Southeast Asia. In Chinese culture, it is known as the “fragrant plant” because of its unique, sweet aroma. The leaves are used for their flavor in many Thai and Southeast-Asian dishes. Pandan is also sold as a paste, extract, and powder, which is used to flavor desserts, much like we use vanilla here in the west. I personally love it and the taste reminds me of a combination of coconut and vanilla. it’s a subtle flavor that adds a wonderful sweet taste.

ABOUT THE FRENCH TOAST

I really wanted this pandan coconut french toast to be as easy as possible. To simplify the process of preparing pandan coconut French toast, I opted for a method that allows for minimal effort and cleanup. By baking the French toast on a baking sheet, ensures breakfast is efficiently prepared with minimal hands-on time or mess.

So I decided baking the pandan coconut french toast on a sheet pan was the best option. It did make everything super easy. I bought sliced brioche bread to make it even easier on myself (I highly recommend it, it’s soft and buttery, and there really isn’t another replacement for it). Most grocery stores that I’ve seen have them and trust me… I live in La Crosse Wisconsin and constantly have to find adaptions for Chinese food, so trust me when I say… Sliced Brioche Bread is more readily available than it used to be. But… If you can’t find it… like so much else… Amazon does offer it.

The process itself is fairly easy. Make the pandan coconut french toast batter, put it all on a baking sheet, and bake. I like to serve mine with shredded coconut, but you don’t have to do that.

OTHER TIPS TO KEEP IN MIND

They won’t make or break your breakfast, but they might help reduce some stress:

  • When using the batter, ladle a thin layer onto the pan before placing the bread in it. This will give your French toast that beloved “dipped in the batter” texture.
  • If you don’t have pandan, feel free to substitute it with vanilla extract.

This French toast recipe will become your next breakfast obsession! It’s crisp on the outside, soft and creamy on the inside, and so easy to make!

Instructions

  1. Pre-heat oven to 400° F
  2. Mix the pandan flavoring, coconut milk, brown sugar, and eggs in a bowl or liquid measuring cup.
  3. Ladle (or pour) enough of the mixture to just barely cover the bottom of a greased baking sheet
  4. Place the bread slices on, then pour the rest of the mixture onto each slice of bread (I used a ladle to do this).
  5. Bake for 25 minutes until set and dry looking on the top. They will be slightly golden on top (Don’t worry. the bottom crisps up more)
  6. Lay out the pan on a towel (or place them all on a platter), with a spatula for serving.
  7. That’s it, breakfast is done!
