Greek Salad Vinaigrette
Say goodbye to dull, lifeless salads forever! This Greek Salad Vinaigrette recipe is vibrant, zesty, and packed with flavor! Made with just seven ingredients, it’s the ideal complement to your favorite salads!
This recipe yields 1 ½ cups (12 oz) of dressing.
This is not a strictly authentic Greek recipe, but more my interpretation, loosely based on the authentic “dressing” on a Greek salad, along with the flavors you see in a Greek Pasta salad (recipes coming soon), both of which are big favorites for both my husband and I).

GREEK SALAD VINAIGRETTE INGREDIENTS
You only need seven ingredients to make this Greek Salad Vinaigrette recipe! Chances are you have them all in your kitchen already:

- Red wine vinegar and one whole lemon give the dressing a bright, tangy flavor.
- Fresh garlic gives a sharp depth of flavor (if you use garlic or garlic scape powder, it will have milder and less assertive garlic flavor).
- Dried oregano creates a fresh aromatic flavor to the dressing.
- Extra virgin olive oiladds the richness you need for that contrasting brightness you get from the vinegar and lemon.
- Sea salt and black pepper, as always, bring out and make all the flavors better and well combined.
SUBSTITUTIONS/SUGGESTIONS
- WHOLE LEMON: You can skip the zest and just use 2 ½ Tablespoons of Lemon Juice.
- RED WINE VINEGAR: 1:1 ratio sherry vinegar or white wine vinegar
- FRESH GARLIC: 1 teaspoon garlic powder or 1 ½ teaspoons of Gourmend Garlic Scape Powder (Use Code: JENNSMITH15 to 15% off at Gourmend)
- EXTRA VIRGIN OLIVE OIL: 1:1 ratio Sunflower oil
MAKING GREEK SALAD VINAIGRETTE
There are two methods you can use to mix your vinaigrette.
METHOD ONE
Whisk together the lemon juice and zest, red wine vinegar, garlic, oregano, and a good pinch of kosher salt and black pepper in a small mixing bowl. Then, drizzle in the extra virgin olive oil while whisking and possibly season with more salt and pepper to taste. That’s it!
METHOD TWO
My preferred method for preparing this vinaigrette involves adding all of the vinaigrette ingredients in a food-safe jar or bottle (a food-safe funnel makes this easier and less messy). Fasten the lid on securely, and then shake the bottle vigorously until the mixture is thoroughly combined.

STORAGE
This Greek Salad Vinaigrette can be stored in a food-safe jar or bottle, allowing for its use over several days. When prepared with fresh garlic, it maintains its freshness for up to 4 days. Alternatively, using garlic powder extends its shelf life to up to 7 days.

WHAT TO SERVE YOUR GREEK SALAD VINAIGRETTE WITH
This dressing is bursting with flavor! The zing from the lemon and red wine vinegar, combined with the kick from the garlic, is simply irresistible. It pairs perfectly with your favorite vegetables. I’m a big fan of tomatoes, cucumbers, red onion, Kalamata olives, and feta cheese, but feel free to add some spinach or romaine lettuce too. My family even likes to use this as a vinaigrette for a simple lettuce salad.

Greek Salad Vinaigrette
Try this quick recipe for Greek Salad Vinaigrette and bring a burst of Mediterranean flavor to your kitchen.
- Total Time: 7 minutes
- Yield: 1 ½ cups (12 oz) 1x
Ingredients
- 1 lemon, zested and juiced (See NOTES 1 for substitutes)
- 1/4 cup red wine vinegar (See NOTES 2 for substitutes)
- 4 garlic cloves, minced (See NOTES 3 for substitutes)
- 1 tablespoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup extra virgin olive oil (See NOTES 4 for substitutes)
Instructions
METHOD ONE
- In a small mixing bowl, mix the lemon juice and zest, red wine vinegar, garlic, oregano, and a good pinch of kosher salt and black pepper. Whisk to combine, and drizzle in the extra virgin olive oil while whisking.
- Pour into a food-safe jar or bottle, for future use (see NOTES-STORAGE for details), or serve immediately with your favorite vegetables.
METHOD TWO
- Add all vinaigrette ingredients to a food-safe jar or bottle. Use a food-safe funnel for easier and less messy addition into the bottle. Securely fasten the lid and shake vigorously until well combined.
