Microwave Quesadilla

The Cheap & Easy Edition: Not everyone has a stove, or can afford to go out to the local butcher and get the “best” chicken breast. But that doesn’t mean you have to eat ramen noodles every day either (not that I’m judging, I LOVE ramen noodles).

That being said, at some point, you gotta get sick of it. This quesadilla recipe is easy, quick, and cheap. My teenagers make this all the time. Best part? It does not sacrifice taste.

That being said, at some point, you gotta get sick of it. This quesadilla recipe is easy, quick, and cheap. My teenagers make this all the time. Best part? It does not sacrifice taste.

Cooking in a microwave doesn’t sound glamorous, and I’m sure most of you only really use it for reheating, but your microwave can be an asset in your kitchen. Especially on a hot day when you don’t want to turn on a stove or burner. And for you college students that can ONLY have a microwave, meals you can cook without a stove are a must!

Along with not always using a stove, not everyone can afford to go to their local butcher to buy the “best quality” fresh Chicken/Fish. Sometimes, you gotta use what you have. I remember being at a point in life, where canned food was about as lux as I got. The fact that I could afford Kraft said something. Especially when my husband and I first started out and my oldest was a newborn. Canned meats were a staple in the house, they were affordable. And if done right, they and be delicious.

I find Canned Tuna (and other canned meats) get a bad wrap, but in all truth, canned tuna is rich in protein and contains many vitamins and minerals such as B-Complex vitamins, Vitamins A and D as well as iron, selenium, and phosphorus. Tuna also contains healthy omega-3 essential fatty acids DHA and EPA (this includes canned Tuna).

Really anyone can use this and I honestly really encourage you to if you’re in a pinch for a good lunch.

Notes:

  • The meat mixture and 4 oz of cheese should make about 3 two-tortilla quesadillas and 6 one-tortilla quesadillas (depending on how much of both you put in).
  • the meat is freezer friendly and will last about 2-4 months in the freezer in a freezer-safe container.

Easy Quesadillas (In the Microwave)

Description

This quesadilla recipe is easy, quick, and cheap. Best part? It does not sacrifice taste.


Ingredients

Units Scale
  • 112.5 oz canned Chicken (or 10-12oz tuna, or 2-6.4 oz tuna pouches.)
  • 12 tablespoons homemade taco seasoning (or 1 package of taco seasoning)
  • 12 Flour Tortillas (One tortilla makes a great Travel size and a two tortilla is perfect for dinner, especially with rice)
  • 4 oz shredded cheese (You can buy it pre-shredded, but a block of cheese and shredding it yourself is cheaper.)

Optional Additions

  • Pico de Gallo/Salsa
  • black beans
  • rice
  • fresh cilantro


Instructions

For a 2-tortilla quesadilla

  1. Mix the Chicken/Tuna with your taco seasoning (Add a little at first and continue to taste). Set aside and begin to assemble
  2. Take one tortilla and place it on a microwave-safe plate.
  3. Sprinkle some cheese (lightly covering the tortilla)
  4. Next, add your Chicken/tuna mixture
  5. now add any optional additions
  6. Top with a little more cheese and the other tortilla
  7. Microwave for 30 seconds to 1 minute 30 sec in your microwave (This varies greatly on your microwave).
  8. Cut (optional) and enjoy!

For a 1-tortilla quesadilla

  1. Mix the Chicken/Tuna with your taco seasoning (Add a little at first and continue to taste). Set aside and begin to assemble
  2. Take the tortilla and place it on a microwave-safe plate.
  3. Sprinkle some cheese, lightly covering half of the tortilla.
  4. Next, add your Chicken/tuna mixture onto the cheese side.
  5. now add any optional additions
  6. Top with a little more cheese and fold. You might need to press lightly to make sure it stays closed.
  7. Microwave for 30 seconds to 1 minute 30 sec in your microwave (This varies greatly on your microwave).
  8. Cut (optional) and enjoy!

Notes
